The company:

The Molino is a family business located north of the Lazio countryside, on the lake of Bolsena located on the border of Umbria and Tuscany. The olive trees, which produce the olive varieties of Caninese and Frantoio, cove an area of about 40 hectares. The olives are harvested by hand or with mechanical aids.
The grinding process is done by continuous cycle cold press. The extra virgin organic olive oil from the Caninese olive is characterized by a yellow-golden color, slightly fruity flavor, with notes of citrus, herbs and tomato. The oil from the Frantoio olive is yellow-green in color and has an aroma of herbs, thistle and dried fruit. The company also produces a PDO certified Tuscia olive oil characterized by a fruity taste with a balanced bitter and spicy aftertaste, which is emerald green in color and has golden hues. The maximum total acidity expressed in oleic acid is 0.5 g per 100 g of olive oil.

The company produces:

  • Organic extra virgin olive oil Tuscia PDO;
  • Organic extra virgin olive oil Canino;
  • Organic extra virgin olive oil flavored with lemon and pepper, basil and pepper, rosemary and pepper, lemon and orange;
  • Fruit jams made from sour cherries, apricots and plums;
  • Organic olive patè made with green olives and seasoned with fennel, pepper and oregano;
  • Durum organic wheat stone ground pasta ‘’Senatore Cappelli’’, with a long drying process at low temperature.
