The company:
The company, located in the northeastern region of Latium, on the hills in the Sabine mountains which descend toward the Tiber River, covers an area of about 20 hectares at an average altitude of 350 meters above sea level. It produces extra virgin olive oil using the Leccino, Pendolino, Frantoio and Carboncella variety of olives. The collection is performed either manually or with the aid of mechanical tools, depending on the variety of olives. The olive oil is pressed by cold press and takes place directly in the company’s mill within 24 hours of harvest, ensuring an optimal and timely milling of the olives. The olive oil is characterized by a fruity flavor due to optimum blend of 4 different varieties of olives: Moraiolo, Leccino, Frantoio and Carboncella.
The Carboncella variety gives the olive oil a very light color and pleasant vein of bitterness.
